El olivar tradicional en Sierra Mágina: evaluación, situación actual y perspectivas

Resumen
El olivar tradicional presenta en la actualidad una amplia problemática en términos de rentabilidad económica poniendo en tela de juicio la sostenibilidad de las explotaciones. En este sentido nos hemos centrado en evaluar la comarca agraria de Sierra Mágina ya que es un buen ejemplo para explicar la situación actual por la que pasan los olivicultores de gran parte del territorio jienense. La dependencia que los municipios de Mágina tienen hacia el sector oleícola hace que sean más vulnerables ante una tendencia bajista de precios de este producto graso. Los costes de producción en zonas de montaña son cada vez más elevados suponiendo un hándicap para los pequeños y medianos productores. Por ello, el objetivo de este trabajo es comprender toda la cadena de producción del aceite de oliva español con el fin de poder explicar las perspectivas que nos ofrece el olivar tradicional de montaña dentro de un mercado internacional cada vez más globalizado.
Traditional olive groves currently present a wide problem in terms of economic profitability, calling into question the sustainability of farms. In this sense we have focused on evaluating the agrarian region of Sierra Mágina since it is a good example to explain the current situation through which the olive growers of much of the territory of Jienense pass. The dependence of the municipalities of Mágina on the olive sector makes them more vulnerable to a downward trend in the prices of this fatty product. Production costs in mountain areas are increasing by providing a handicap for small and medium producers. For this reason, the objective of this work is to understand the entire production chain of Spanish olive oil in order to be able to explain the perspectives offered by the traditional mountain olive grove within an increasingly international market globalized.
