Resumen
La detección de patógenos en alimentos es un aspecto fundamental para garantizar la seguridad alimentaria y prevenir la transmisión de enfermedades. Existen diversas técnicas para detectar patógenos en muestras de alimentos, como métodos tradicionales, métodos basados en ácidos nucleicos y biosensores. Los métodos tradicionales son económicos pero tienen limitaciones en sensibilidad y especificidad. Por otro lado, los métodos basados en ácidos nucleicos ofrecen ventajas, como la capacidad de detectar múltiples patógenos en una sola muestra, mientras que los biosensores proporcionan alta sensibilidad, rapidez, portabilidad y precisión. Es importante tener en cuenta que las enfermedades transmitidas por alimentos (ETA) son un problema mundial en seguridad alimentaria. Por esta razón, se deben implementar medidas de higiene y seguridad adecuadas en todas las etapas de la cadena alimentaria para prevenir la transmisión de patógenos. Además, es fundamental colaborar con investigadores, industrias alimentarias y organismos reguladores para garantizar la seguridad alimentaria.
Detection of pathogens in food is a fundamental aspect of ensuring food safety and preventing disease transmission. There are various techniques to detect pathogens in food samples, including traditional methods, nucleic acid-based methods, and biosensors. Traditional methods are cost-effective but have limitations in sensitivity and specificity. On the other hand, nucleic acid-based methods offer advantages such as the ability to detect multiple pathogens in a single sample, while biosensors provide high sensitivity, speed, portability, and precision. It is important to note that foodborne illnesses are a global issue in food safety, and appropriate hygiene and safety measures must be implemented at all stages of the food chain to prevent pathogen transmission. Moreover, collaborating with researchers, food industries, and regulatory bodies is crucial to ensure food safety.
