Resumen
En España, el sector de los aceites de oliva es uno de los sectores agroalimentarios con mayor peso de nuestro país. De ahí que resulte interesante dar a conocer los aspectos más elementales que conciernen a este sector para posteriormente tratar de profundizar más en las características de nuestro mercado interior y descubrir cuáles son los factores que han dado lugar a que este mercado durante la última década experimentase un incremento incesante de la demanda exterior, principalmente de países no productores. Indudablemente, es necesario hacer referencia en la mayoría al papel de la provincia de Jaén dada su importancia en el sector y al tratarse de la provincia líder mundial en la producción de los aceites de oliva.
In Spain, the olive oil sector is one of the most important agri-food sectors in our country. It is therefore interesting to present the most basic aspects of this sector in order to subsequently delve deeper into the characteristics of our domestic market and discover the factors that have led to this market experiencing a steady increase in foreign demand over the last decade, mainly from non-producing countries. Undoubtedly, it is necessary to mention the role of the province of Jaén, given its importance in the sector and the fact that it is the world's leading province in olive oil production.
