Aspectos bioquímicos de los ácidos grasos de la dieta mediterránea en la salud cardiovascular

Resumen
Hoy en día las enfermedades cardiovasculares son la primera causa de muerte en el mundo desarrollado, esto puede deberse a los hábitos y estilos de vida, como la mala dieta. La dieta mediterránea ha sido de gran interés de estudio, pues muestra un patrón dietético muy saludable, de gran interés en esta revisión, debido a su función cardioprotectora. Esto se debe a su bajo contenido en ácidos grasos saturados y alto contenido en ácidos grasos insaturados, los cuales se ha demostrado que confiere elasticidad a las paredes de las arterias, protegiéndolas ante un aumento de presión, y protegiéndolas ante el cúmulo de lipoproteínas de baja densidad (LDL) en las paredes arteriales, evitando la formación de la placa de ateroma y evitando así la posible obstrucción de los vasos. Por tanto se debe realizar una promoción de este patrón dietético para una prevención y mejora efectiva de los problemas cardiovasculares.
