Resumen
Este trabajo utiliza la técnica no paramétrica del análisis
envolvente de datos (DEA) a través de la aplicación de los
modelos CCR y BCC con orientación al output sobre una muestra
de empresas del sector hostelero de Jaén capital. De este modo,
conoceremos los valores de eficiencia técnica pura, global y de
escala de cada restaurante y cuáles de ellos se sitúan en la frontera
de eficiencia y se muestran como referente de buenas prácticas
para el resto.
This paper uses the non parametric technique of data envelopment analysis (DEA) through the implementation of CCR and BCC models, oriented to the output, on a sample of enterprises within the hospitality industry of Jaén city. In this way, we will know the pure, global and scale technical efficiency values os each restaurant, and which of them are located in the efficiency limit and are shown as a benchmark for the rest.
