LA GESTIÓN DEL RIESGO EN LOS PROCESOS LOGÍSTICOS DE ALMACENAMIENTO DE PRODUCTOS AGRÍCOLAS PERECEDEROS. CASO PRÁCTICO, GESTIÓN DE RIESGOS DEL ALMACENAMIENTO DEL ACEITE DE OLIVA

Abstract

En este trabajo se describe por un lado los procesos logísticos del almacenamiento de productos agrícolas perecederos, describe de forma general los procesos que se llevan a cabo en un almacén de esta tipología de productos. Los productos agrícolas perecederos tienen la peculiaridad que necesitan unas condiciones ambientales especiales para poder mantener su frescura y calidad en el almacén. Por otro lado damos una visión general de la gestión del riesgo a través de las normativas ISO 31000 y ISO 31010, considerando esta tipología de productos en su mayoría como alimentos, hemos insertado en la normativa UNE-ISO 22000 sobre la inocuidad de los alimentos. Para finalizar hemos aplicado una metodología de análisis de decisión para la gestión de riesgos de un almacén de aceite de oliva, al ser el máximo exponente de producto agrícola perecedero de nuestra provincia.

This paper describes on the one hand the logistic processes of the storage of perishable agricultural products, describing in general the processes that are carried out in a warehouse of this type of products. Perishable agricultural products have the peculiarity that they need special environmental conditions to maintain their freshness and quality in the warehouse. On the other hand we give an overview of risk management through the ISO 31000 and ISO 31010 standards, considering this type of products mostly as food, we have inserted in the UNE-ISO 22000 standard on food safety. Finally, we have applied a decision analysis methodology for the risk management of an olive oil warehouse, being the maximum exponent of perishable agricultural product in our province.
