Since ancient times, environmental problems have been caused by the olive oil extraction industry due to the production of large quantities of vegetable water, but thanks to an important reform in this sector, the extraction process was modernized using two-phase centrifuges. With this system, the by-product generated is a semi-solid material, the alperujo. In this work, the recovery of this by-product has been studied, taking advantage of its fertilizing properties and as an organic amendment. Its application as an organic amendment gives it an improvement in its physicochemical properties, enriching it. For this reason, this paper studies the physicochemical properties of different alperujo composts with various raw materials (manure, sojin, grape stems...) during the composting process, and some techniques (FTIR and UV-VIS) for its characterization, in order to obtain a quality compost.
